Cherry Grilled Chicken Salad
Serves 2
Ingredients:
2 Chicken Breasts, sliced in half horizontally
¾ cup Bacon Bits
½ cup Blue cheese or Cheddar cheese, cubed
¼ lb Fresh Cherries, pitted and halved
Sea salt
Black Pepper
Salad:
1 ½ cup coarsely chopped Frisée lettuce
1 ½ cup coarsely chopped Romaine lettuce
1 ½ cup coarsely chopped Endive
Dressing:
¾ cup Cherry Vinegar
¼ cup olive oil
Sea Salt
Black Pepper
Preparation:
1- For best results grill chicken over a barbecue while basting it with the Cherry Vinegar.
if you do not have a barbecue, heat olive oil in a skillet and cook the
breast filets on both sides over a medium flame until fully cooked
2- Remove the filets and allow to cool
3- Mix the salads, cheese, bacon bits and cherries together
4- Mix together the olive oil and Cherry
Vinegar and fold into the salad
5- Plate salad on a long white dinner plate
6- Cut the chicken in strips and place on top of the
salad
7- Give a final brush of Cherry Vinegar on the chicken and serve.
