Red Pepper Octopus Serves 2
Ingredients:
2 young Octopuses
7 springs flat leaf Parsley
1 Red Onion
7 Garlic cloves
4 tbls. Olive Oil
1/2 Lime
2 Birds eye Chillies (optional)
Salt
Black Pepper
Dressing:
1 cup Red Pepper Vinegar
Preparation
1- Chop the onions, garlic and parsley into small pieces
2- Cut the octopuses into roughly 2" pieces
3- Preheat a cast iron skillet.
4- Add the olive oil and quickly add the octopuses and sautée for 20 seconds
5- Add the garlic, onion and chillies (optional) while sautéing
6- Continue cooking for about 4 minutes sautéing roughly every minute
7- Add the parsley while mixing for another 10 seconds
8- Add and mix in the Red Pepper Vinegar
9- Salt and pepper to taste
10- Take off the flame and squeeze half a lime over your dish and serve on the skillet.
