For the candied bacon:

8 slices light bacon (extra thin)
5 tbls light brown sugar
1 tbls apple juice

For the cocktail:

1 ½ oz Goslings rum
4 oz ounces Pear Fresh Fruit Vinegar
½ cup Sprite
3 drops old-fashioned bitters
½ oz Green Apple Fresh Fruit Vinegar (optional)

Preparation:

Making the candied bacon: 
1-Preheat the oven to 350oF. 
2-Place the bacon on a baking sheet and bake until crispy. Let cool 
3-In a small pot heat brown sugar and apple juice until it becomes a caramel. 
4-Brush a top bacon and let dry/cool.

Make the cocktail: 
1-Combine the rum, pear vinegar and bitters in a cocktail shaker with ice. Shake well then add sprite and pour into a lowball glass. 
2-Garnish with a slice of candied bacon 
3-(Optional) Add a drizzle of Green Apple drizzle.Ingredients:
